Recipe for Chicken Corn Chili
Earlier today, you may have read my post about Meal Planning. Well, this is one of my own recipes that is quick, easy,and delicious. It’s great for a cold day with just the family or a large crowd. This is also a great recipe to double and then freeze the extra. Ethan and I disagree about whether or not it is actually chili or rather just a stew, but this is as close as I get to chili. Either way, a yummy fall dish!
Chicken Corn Chili
- 2 lbs Cubed, uncooked chicken
- 3/4 bag frozen corn
- 1 can Diced tomatoes (with juices)
- 1 small onion, diced
- 1 tsp garlic
- 2 tsp chili powder
- 1/2 tsp cumin
- 1 cup Chicken broth
- salt and pepper to taste
Put it all in the crock pot and cook 6 – 8 hours on low.

Yummy recipe! I think its more like spicy chicken corn soup. It’s not chili without beans. Great no matter what you call it though!
