ChiliEarlier today, you may have read my post about Meal Planning. Well, this is one of my own recipes that is quick, easy, and delicious. It’s great for a cold day with just the family or a large crowd. This is also a great recipe to double and then freeze the extra. Ethan and I disagree about whether or not it is actually chili or rather just a stew, but this is as close as I get to chili. Either way, a yummy fall dish!

Chicken Corn Chili

  • 2 lbs Cubed, uncooked chicken
  • 3/4 bag frozen corn
  • 1 can Diced tomatoes (with juices)
  • 1 small onion, diced
  • 1 tsp garlic
  • 2 tsp chili powder
  • 1/2 tsp cumin
  • 1 cup Chicken broth
  • salt and pepper to taste

Put it all in the crock pot and cook 6 – 8 hours on low.

Yummy recipe! I think its more like spicy chicken corn soup. It’s not chili without beans. Great no matter what you call it though!
