Brunch is one of my favorite meals. And you know what my favorite part of brunch is? (I know you know what’s coming!) THE DRINKS! Hot tea, coffee (well, the smell anyway), and of course, Mimosas! My husband’s family usually celebrates holidays over brunch and its the best. The kids love it because kids always love breakfast food. The adults love it because its low pressure and the kids are happy. And my sweet sister-in-law is the queen of mimosas. I love her. Have I told you that? I love her and her sweet mimosa making self. 

This raspberry limoncello mimosa is a nice change-up to the standard Orange Juice Mimosa, while keeping the sweet, light inspiration of the original. I got the idea a few weeks ago when I got a bee in my bonnet (or more accurately, top bun) about making limoncello. It was so easy and delicious…and I’ll be sharing my recipe asap with you all. Back to mimosas…make it. Now. You will thank me and so will all your guests! They will think you’ve spent hours slaving over this fancy drink, when really its just a few minutes and then hours of sipping enjoyment.

Ingredients
  1. Sparkling Wine
  2. Limoncello
  3. Raspberries
  4. Mint
Instructions
  1. Pour chilled Sparkling Wine into glasses. I used Brut because I like dryer flavors, but you could also use Prosecco if you want it sweeter. Once in the glasses, add a splash of Limoncello (more than a splash and it becomes a serious drink, so you make the call.) Then add muddled raspberries and mint. If you want it to look more like a garnish, you can freeze the raspberries for 30 minutes or so prior to serving. ENJOY!

I forgot to mention, while the Limoncello is the big bang on this recipe, the mint is the quiet hero. It gives it that extra, special fresh taste that brings the flavors together. So I hope you enjoy this recipe as much as I do!
